The Oil Cycle

From the mill to the bottle.

1. Washing and Defoliation

The first step towards purity. We remove all vegetable residue and wash the olives with temperature-controlled water to prepare them for crushing.

2. Crushing

Cold extraction begins here. The olive paste is generated through the mechanical action of the crusher.

3. Malaxation

The olive paste is slowly worked to preserve the polyphenols and Cilento scents intact.

4. Centrifugation

Through the decanter, centrifugal force separates the oil from water and pomace. Mechanical precision for crystalline oil.

5. Separator

The final separation step. The separator handles the separation of remaining water and oil.

6. Storage

The oil is stored in temperature-controlled steel tanks. Nitrogen is used to prevent oil oxidation.

7. Bottling

The oil is bottled using automated machinery to then be brought to our customers' tables.
